The origin of civet coffee is closely related to the history of coffee cultivation in Indonesia. In the early 18th century, the Dutch opened commercial plantations in their colonies in the Dutch East Indies, especially on the islands of Java and Sumatra. One of them is Arabica coffee plantation with seeds imported from Yemen. During the "Cultivation Forced" or Cultuurstelsel era (1830-1870), the Dutch prohibited indigenous plantation workers from picking coffee cherries for personal consumption, however local residents wanted to try the famous coffee drink. Then the plantation workers finally found that there is a kind of civet who likes to eat coffee cherries, but only the flesh of the fruit is digested, the epidermis and coffee beans are still intact and undigested. The coffee beans in the civet droppings are then picked up, washed, roasted, pounded, then brewed with hot water, then civet coffee is created. [2] The news about the pleasure of aromatic coffee was finally smelled by the Dutch, plantation owners, so this coffee became the favorite of the rich Dutch. Due to its rarity and unusual manufacturing process, civet coffee has been an expensive coffee since colonial times.

Luwak, or the complete civet civet, love to find fruit that is good enough and ripe, including coffee fruit as food. With its sensitive sense of smell, the mongoose will choose the really ripe coffee cherries as food, and after that, the coffee beans that are still protected by their hard and undigested skin will come out with the civet droppings. This happens because the mongoose has a simple digestive system, so hard foods such as coffee beans are not digested. Luwak coffee beans like this, in the past until now are often hunted by coffee farmers, because they are believed to come from the best coffee beans and have been fermented naturally in the civet digestive system. The aroma and taste of luwak coffee is indeed special and perfect among coffee fans and connoisseurs around the world.

The civet coffee that was given by the President of Indonesia, Susilo Bambang Yudhoyono to the Prime Minister of Australia, Kevin Rudd, on his visit to Australia in early March 2010 caught the attention of the Australian press because according to the Australian Quarantine Bureau it had not been examined first.
