The origin of civet coffee is closely related to the history of coffee cultivation in Indonesia. In the early 18th century, the Dutch opened commercial plantations in their colonies in the Dutch East Indies, especially on the islands of Java and Sumatra. One of them is Arabica coffee plantation with seeds imported from Yemen. During the "Cultivation Forced" or Cultuurstelsel era (1830-1870), the Dutch prohibited indigenous plantation workers from picking coffee cherries for personal consumption, however local residents wanted to try the famous coffee drink. Then the plantation workers finally found that there is a kind of civet who likes to eat coffee cherries, but only the flesh of the fruit is digested, the epidermis and coffee beans are still intact and undigested. The coffee beans in the civet droppings are then picked up, washed, roasted, pounded, then brewed with hot water, then civet coffee is created. [2] The news about the pleasure of aromatic coffee was finally smelled by the Dutch, plantation owners, so this coffee became the favorite of the rich Dutch. Due to its rarity and unusual manufacturing process, civet coffee has been an expensive coffee since colonial times.
