A species of red algae, Irish moss (Chondrus crispus, or carrageen moss) can be found growing along the rocky shores of the Atlantic throughout Europe and North America. Throughout history it was famously used by the Irish (from whom it derives its Carrageen name), for everything from mattress stuffing and cattle feed to a thickener for colored inks. In folk magic, it is said to be great for increasing luck, and for this purpose it is often carried or left underneath floor rugs to encourage a steady flow of money and success.
Commercially, Irish Moss can be found within a wide variety of culinary products ranging from dairy products to beer. In dairy products (and some gelatin deserts from Asia) it is often used as a thickening agent. In beers and wines it is used in the refining process for removing impurities.
