Black Turtle is a traditional soup bean that stores really well. This tough bush variety has great resistance to diseases and thrives even in hot and dry conditions. You can eat the beans when they're young and green, but they taste better as dry shell beans. These seeds are a deep black color and will be ready to harvest in about 90 days.

Back in colonial America, black beans weren't really liked due to their dark color. Because of this, the Black Turtle bean was promoted as a cheap alternative to turtle meat for making turtle soup, which was a fancy dish back then. The seeds of the Black Turtle bean plant come from South America; some historians trace their origins back to around 8,000 BC with the Pre-Incan civilization in Peru. People back then appreciated dry beans for their ability to stay fresh for a long time in storage. Nowadays, black beans are a staple in Latin American cuisine, used in soups, sauces, and main courses.

Sow the dry bean seeds directly into rich, well-drained soil under full sun at least a week after the last frost, as beans are pretty sensitive to cold. If you're new to planting beans in your garden, treat the seeds with a powder inoculant to kickstart nitrogen fixation. Plant them about 1" deep and 3-6" apart, with rows spaced around 2' apart; make sure to press the soil down over them for good contact.
