Eragrostis tef is a self pollinated annual reseeding cereal grass. Teff produces airy sprays that emerge from well formed 18" to 20" inch clumps. Needs good drainage. It is considered to be the world’s smallest edible grain. It makes a nutritious wheat-like flour for gluten free baking or is used similar to millet and quinoa in cooking, but the seed is much smaller and cooks faster. Also great over salad. A rich source of protein, dietary fiber, and manganese, and contains moderate amounts of thiamin, phosphorus, iron, magnesium, and zinc.
The textural panicles are also used for cutting and add a delicate dimension to flower bouquets and arrangements.
