I know, you’re thinking “cheese and raisin ravioli? That doesn’t even sound good.” Well, let me tell you that you have a wonderful surprise coming if you try this recipe.
This delicious recipe has been in our family for more than three generations. My great-grandmother took it over from Italy, and her family has been enjoying it since. It is so unique, and most people when I mention Cheese and Raisin Ravioli wrinkle up their nose and don’t even want to try it. However, everyone who has felt that way and then tried it have absolutely loved them.
Now these aren’t something that you can make in a half hour. You’ll have to dedicate at least a couple hours by the time you make the dough, knead it, and put the ravioli together. I always make a couple batches and freeze them to have a supply on hand.
We are giving you four pages of instructions. The recipe includes instructions on:
1. Making the dough by hand;
2. Making the dough using a heavy duty mixer to mix the dough;
3. The ingredients for the filling;
4. Rolling out the dough, and making the ravioli using two different methods: a. Fold-Over Method b. Using two narrow strips of dough Method
5. How to store and cook them.
