A traditional southern specialty. Add celery, onion, bell pepper, water, and your choice of meat (great with seafood or sausage).
Saute 1 cup chopped celery, onion, and green pepper in cup vegetable oil. Add 10 cups of water and the mix. Cook additional 30 minutes. Add desired meat (shrimp, sausage, crab meat etc.) and cook 5-10 minutes more. Discard bay leaves. Serve over rice! Makes over 10 cups.
