It's just so much fun trying to figure out how to make things better. My husband and I have traveled a bit and we like to try new things. We often stumble across things that we REALLY like and I generally try to re-create them and then try to make them just a little bit better (sometimes A LOT better!). I always experiment on my family first and of course they almost always like the stuff I make. If I get a good report from the kids, I'll pack it up and take it to work for the next set of guinea pigs. If they like it, I'm pretty sure I have something special. If I had a dime for every time someone told me "I'll pay you to make me some of this!" I wouldn't have to work my day job. What you see here is the result of all that.
This "very rich" cheesecake is not for the diet conscious. The filling contains velvety white chocolate with a swirl of fine orange liquer-laced raspberry cooli. I once took this glorious cake to the office for a coworker's promotion party. It was devoured within 10 minutes. The only words spoken were "To die for!".
Okay, what to do with half of a cheesecake? Cut into 1" squares, dip into melted chocolate and serve on skewers at a party. I really have a hard time with this because there is so rarely any left over.
