It's just so much fun trying to figure out how to make things better. My husband and I have traveled a bit and we like to try new things. We often stumble across things that we REALLY like and I generally try to re-create them and then try to make them just a little bit better (sometimes A LOT better!). I always experiment on my family first and of course they almost always like the stuff I make. If I get a good report from the kids, I'll pack it up and take it to work for the next set of guinea pigs. If they like it, I'm pretty sure I have something special. If I had a dime for every time someone told me "I'll pay you to make me some of this!" I wouldn't have to work my day job. What you see here is the result of all that.
This cheesecake has a smooth cream cheese filling with sweet caramel 'Dolce de Leche' baked into the crust and drizzled on top. I baked one of these for my son's birthday a few years ago. He carried the remains to work the next day. Apparently he shared with his coworkers, because I had multiple orders for more cakes.
Okay, what to do with half of a cheesecake? Cut into 1" squares, dip into melted chocolate and serve on skewers at a party. I really have a hard time with this because there is so rarely any left over.
