It's just so much fun trying to figure out how to make things better. My husband and I have traveled a bit and we like to try new things. We often stumble across things that we REALLY like and I generally try to re-create them and then try to make them just a little bit better (sometimes A LOT better!). I always experiment on my family first and of course they almost always like the stuff I make. If I get a good report from the kids, I'll pack it up and take it to work for the next set of guinea pigs. If they like it, I'm pretty sure I have something special. If I had a dime for every time someone told me "I'll pay you to make me some of this!" I wouldn't have to work my day job. What you see here is the result of all that.
This is the guts of the original 'Italian Butter' blend, but with more GARLIC. One day, when I get rich, I'll put it in a tube. The #1 ingredient is lots of freshly roasted garlic. Then I add fresh basil, a little rosemary, Greek oregano, sea salt, and pepper flakes. This blend is guaranteed to keep the vampires away. Just add olive oil, a hunk of bread and off you go.
This was originally designed to add to olive oil for a bread dipping sauce, hence"Italian Butter". Now, you're significant other has invited the boss for dinner and the cupboard is bare. Grab a rotisserie chicken from the market, whack it up then spread a packet or two of the blend over the pieces, put in a 325 oven to heat through. You'll be the water cooler conversation for days. But, don't just waste this on bread or a parched bird. You can add this to your favorite marinara sauce, a slice of succulent prime rib or into blue cheese vegetable dip. STUPID GOOD!
