Ginger is the dried knobby shaped root of the perennial herb, Zingiber officinale. The flavor of ginger is characterized by its unique combination of lemon/citrus, soapy, and musty/earthy flavor notes. It is warming to taste. Ground dried ginger poweder is good in baking, rice dishes, and marinades. Stir Ground Ginger into a cup of hot water with lemon juice and honey for a soothing drink or add it to stir- frys or curries for an Asian flavor. You can also mix some ground ginger with garlic, olive oil, vinegar, soy sauce, and honey for a delectable salad dressing. Another great way to use ginger is to add it with orange juice to sweet potatoes. Ground Ginger can be substituted for grated ginger if need be and the conversions are: 1/8 tsp. ground ginger equals 1 tbsp. grated ginger.
