This cookbook beings at the beginning, with directions for one of the most important steps in preparing a salad: the proper washing and drying of the greens. The author then explains the difference between them - at last the reader is told exactly what bibb lettuce is, leaf lettuce and curly endive, to name only a few.
In subsequent chapters, the author lists 24 delectable menus, for luncheon and dinner, which feature salads, and presents recipes for salads from all over the world. There are wickedly rich salads as well as many deliciously low in calories. There are heroic main-dish salads, others that go to the table merely as appetite teasers, and a few that arrive as dessert.
Out of the Near East comes a concoction known as Tabbouleh, a combination of cracked wheat and parsley; and from Mexico, something called Ceviche and made with raw halibut. Variations on old favorites include Austrian Apple-Potato Salad, Prune Aspic, and Singapore Chicken Salad.
A final section entitled "What the Well-Dressed Salad Will Wear" gives all the information on various salad dressings and the art of mixing a salad to perfection.
This book is enhanced throughout with practical advice (use a pillow slip if you have too many wet greens to dry in a towel) and with amusing anecdotes that lend emphasis to many of the author's directions.
