Very moist and sweet- almost like eating a dessert!
Additional Recipe Ideas:
Chili-Lime Cornbread- Simply add 3tbls of Chili powder or Mexican Fiesta Dip and the juice and zest of 1 small lime. Prepare as directed. This goes great as a side for BBQ.
Cornbread Chili Toppers- Chili and cornbread just go great together. Prepare Chili. Mix one package of Sweet Cornbread, set aside. In ramekins or
small individual baking dishes, fill with Chili, top with shredded cheese and spread a thin layer of the Sweet Cornbread batter. Bake in oven until cornbread is done. Viola' Chili and Cornbread in one.
Cornbread Stuffing- Prepare Sweet Cornbread as directed. Cool, then crumble an set aside. In skillet saute, chopped onion, celery and ground sausage. When cooked through and softened, add crumbled
cornbread. Spread into baking dish and bake until set and crisp on top.
Sweet Honey Corn Muffins- Prepare Sweet Cornbread as directed. Add 1/4 cup of honey to batter and 1 cup of drained can corn. Pour into
muffin tins sprayed with non-stick spray, drizzled the top with more honey and bake until done.
Zucchini-Corncakes- Shred 2 cups of raw zucchini, pat dry with towel. Mince one small onion. In a bowl, mix the zucchini, onion, salt,pepper, the package of Sweet cornbread mix and 4-6 eggwhites. Choose one or the other:
1. In a skillet sprayed with cooking spray or lightly oiled, fry up by placing an ice cream scoop size of the zucchini mixture and pat down into a patty. When one side is browned, flip and cook through. #2 Preheat oven to 375. On a foil lined baking sheet, sprayed with cooking spray do the same thing, ice cream scoop size, patted down.
Bake until edges of bottom look browned, flip the corncakes to brown the other side. This makes a light and healthy lunch or dinner. To Serve, top
Zucchini Corncakes with 1/4 prepared Spicy Salsa for an extra kick.
Cornmeal Pancakes- A twist on the ordinary. Mix together, 1 cup of Sweet Cornbread mix with 1 Cup of Bisquick. Add 1 cup of milk and 1/2
of an egg. Mix and pour into your skillet and cook as you would regular pancakes. Top with your favorite syrup. Berry syrups are
particularly good on these, such as blueberry or strawberry syrups.
