Cooking with Hougen Recipes for the Hard To Please Vintage Southern Cookbook Signed by Author
Cooking with Hougen - Recipes for the hard to please, Richard T. Hougen, 1960, Abingdon Press, hardcover with dust jacket, 256pp, signed by author.
A collection of 177 recipes which, even in 1960, were chosen for their nostalgia - made with "remembrances of things past, set with different rules for mixing and planned for adaptation to our modern kitchens" - by the manager of the Boone Tavern, Berea College Hotel in Berea, Kentucky. He autographed this copy.
Chapters are as follows: Breakfast dishes; soups; meats, fish, poultry, and accompaniments; potatoes and vegetables; salads and sandwiches; breads; cookies and punch; desserts; cakes; and pies. Recipes include "Fresh Mushroom and Oyster Stew", "Poulet Dore (Golden Chicken)", "Rolled Beef Round, Cheese Dressing" served with apples baked along with the roast, "Pineapple Beets", "New Potatoes with Saffron Cream", a variety of jello salads, "Strawberry Biscuits", "Corn Bread", "Apple Fritters", "Mountain Woman Country Corncakes", and an intriguing deep fried snack called "Moments of Bliss".
In excellent collectible vintage condition, clean, intact, with hardcovers showing almost no wear, protected by a dust jacket in good condition with edge wear and tear appropriate to years of careful storage.
